CHEF SPOTLIGHT: EUGENE KOROLEV

Eugene Korolev is the chef behind SINO, the new Ukrainian restaurant in Notting Hill. Eugene is widely regarded as one of Ukraine’s most exciting culinary talents. Prior to launching SINO, his career took him to some of Europe’s most acclaimed Michelin-starred kitchens – from Vendôme to Atelier Amaro, and Benoit in Paris – as well as to the position of President of Bocuse d’Or Ukraine.

A year after opening his first solo restaurant in his hometown of Dnipro, Eugene put his culinary career on hold to join the Ukrainian army at the start of the war in 2022. He served on the front line until September 2023, and it was during this time that Eugene began formulating the menu concept for SINO, dreaming up dishes during moments of respite.

Having formed a friendship with SINO founder Polina Sychova, the Ukrainian duo opened the doors to the restaurant in May this year, with a refined menu that blends Ukrainian food culture with contemporary techniques by reimagining traditional dishes, serving the likes of Cherry glazed BBQ catfish, sausage & paprika sauce and Beef vareniky dumplings, spicy beef broth, lemon verbena, smoked mushroom garum.
