We're in a celebratory mood here at Tonic, as today we celebrate a total of 12 Michelin stars for our clients awarded at this year's Glasgow ceremony. Just a few years since we opened our office in Scotland, it was an honour to be amongst it all at last night's restaurant 'Oscars'.

Serendipitous timing for us too, as today we announce our new partnership with Moor Hall - just as they win their much coveted and deserved third star.

Much is often said about Michelin - it's relevance, diversity, and ability to put on a show for starters - but undoubtedly it remains unbeatable for kudos, and for many chefs, it is the ultimate accolade. To those who are basking in the glory of a coveted win this week - congratulations to you!

MOOR HALL awarded three Michelin stars, and GORSE, CORNUS and AVERY awarded first stars in Great Britain & Ireland guide 2025

We were thrilled to see new Tonic partner, Moor Hall, receive its third Michelin star in the guide this week. Thoroughly deserving of Michelin's highest accolade, we are excited to now be partnered with Chef Patron Mark Birchall and his Lancashire restaurant. We are also hugely proud to welcome Chef Tom Waters and Gorse into the Tonic fold this month, which earned one Michelin star and became the first Cardiff restaurant ever to do so.

It was also wonderful to see more Tonic partners receive awards yesterday evening: Belgravia's Cornus and Edinburgh's Avery both received their first stars within a year of opening, while Glasgow's Margo was awarded a Bib Gourmand. Huge congratulations also to Kitchen Table, LUCA, The NinthShaun Rankin at Grantley Hall and Osip - another new Tonic partner - which all retained their stars. Well deserved achievements all round!

Introducing SALSIFY, Executive Chef Ryan Cole's critically acclaimed fine dining restaurant in Cape Town

Salsify, the exceptional fine dining destination from Executive Chef Ryan Cole in South Africa, is joining Tonic's international roster this month. From within the storied walls of Cape Town's The Roundhouse national monument, Salsify overlooks glorious views of both mountains and the ocean. Ryan's tasting menus explore the hyperlocal produce of Cape Town through his confident, unfussy cooking style, honed at Phil Howard's The Square. Read more here.

WILDFLOWERS, CORNUS and THE PALMERSTON celebrated at The Good Food Guide awards

In more awards news, it was great to see two of our 2024 new openings shortlisted at The Good Food Guide awards: Wildflowers for 'Most Beautiful Restaurant', and Cornus for 'Drinks List of the Year'. The Palmerston team were also invited to collect the 'Most Exciting Food Destination' award on behalf of Edinburgh - having worked with incredible talents in the city's hospitality industry for three years now, we can't help but agree.

Celebrating our partners at the Tonic client lunch

We recently hosted our first client party for our Tonic PR and Tonic Studio partners. Attended by some of the most inspiring and, quite frankly, brilliant brains in hospitality, it was a great way to share ideas, to hatch plans, and to toast the year ahead. A huge thanks to chefs Merlin Labron-Johnson and Patrick Powell for the fantastic food, and thank you also to LUCA's Johnny Smith and Daniel Willis for their great support, ideas, and for keeping glasses more than generously full throughout.

Jun Tanaka's take on the trending dessert is flavoured with blood orange zest, brûléed, and served with fresh blood orange and poached rhubarb.

This zesty pre-dessert from James Knappett uses blood orange three ways: a sorbet drizzled with extra virgin olive oil, an infused custard and fresh fruit.

Where to dine on Valentine's Day

While we're head-over-heels for dining out all year round, Valentine's Day makes for an irresistible excuse to treat a loved-one (and yourself) to a very good dinner. From 13th-15th February, a six-course menu on Michelin-starred LUCA's stunning terrace will transport guests to Italy, while Sri Lankan restaurant Kolamba East will spice up the 14th with special dishes including Hand dived scallop with banana blossom and tomato relish. At Nessa, Tom Cenci's Valentine's Day roster will include an Apple tarte tatin, vanilla ice cream and honeycomb to share, while diners at Pastaio can opt for the bright pink special Pandan and raspberry tiramisu from guest chef Ana Da Costa throughout February. If Palentine's is more your thing, Oriole is offering groups of three at its Bamboo Bar a complimentary Ménage-à-Trois cocktail each.
