Dish Spotlight: Lobster rice with ox tongue at Maré
Rafael Cagali's new Hove restaurant, Maré is a brilliant expression of the Brazilian Chef's heavyweight pedigree. A version of his Lobster rice helped him secure two Michelin stars at Da Terra, and at Maré that skill is no less evident. Lobster is brushed with a shell oil, finished on the bbq, and sits on Japanese rice cooked in a light bisque. Pickled ox tongue runs through the dish, with dende mayo on top - it's already become a favourite at this newly opened restaurant. Simply described by Cagali as 'my take on surf and turf' doesn't quite do it justice - it's one of our favourite things to have tried in 2025.
