Two minutes with Aaron Potter and Laura Hart, co-founders of Bar Flor
What inspired you to create Bar Flor and how does it reflect your evolution since opening?
We always wanted to do something like this in the space above Wildflowers, even from before we first launched the restaurant! Our main source of inspiration is the bar culture from some of our favourite parts of Spain. As for the evolution, we've taken lots of the learnings from our first year of Wildflowers, and used this experience to bring Bar Flor to life now.
If a guest were visiting for the first time, what pintxo and drink pairing would you recommend starting with?
Definitely a glass of vermouth and a gilda, either a classic one or our seafood version. It's the best way to start the night.
Laura, what was your vision when designing Bar Flor’s interiors, and how does the floral mural tie into the overall energy of the space?
I loved the murals we've seen in older buildings in Italy or Greece, which are lively but with slightly muted tones. Those are what I had in mind for Bar Flor, and a brilliant artist (Jo Faulkner) took my mood board and created something beautiful for us.
