Two minutes with Aaron Potter and Laura Hart, co-founders of Bar Flor
What inspired you to create Bar Flor?
We’ve always had the idea for Bar Flor in the back of our minds—even before we opened Wildflowers. The space above the restaurant felt like the perfect opportunity to create something a little looser, more energetic, and inspired by the bar culture we love in places like Barcelona and San Sebastián. Where Wildflowers is more considered and intimate, Bar Flor is playful and fast-paced. Dishes come out as they’re ready, there’s a real buzz to the room, and the menu gives us freedom to experiment. We’re also really excited to highlight wines from small suppliers, with a rotating by-the-glass list that keeps things fresh and constantly evolving.
If a guest were visiting for the first time, what pintxo and drink pairing would you recommend starting with?
Definitely a glass of vermouth and a gilda, either a classic one or our seafood version. It's the best way to start the night.
Laura, what was your vision when designing Bar Flor’s interiors, and how does the floral mural tie into the overall energy of the space?
I loved the murals we've seen in older buildings in Italy or Greece, which are lively but with slightly muted tones. Those are what I had in mind for Bar Flor, and a brilliant artist (Jo Faulkner) took my mood board and created something beautiful for us.
