What can guests expect at Cardinal?

I guess they can expect a bit of a journey. We want the whole experience to be an exciting showcase of flavours and produce we’re all enthusiastic about. There'll be lots of smoking, picking and fermenting. Mostly because it tastes great, but it also keeps us interested and engaged.

What drew you to the Eyre Place site for the restaurant?

It’s in a great part of town... and near my house and Skua so particularly convenient for me! Stockbridge and New Town have seen a bit of a boom in restaurants and eateries recently so it felt like a good fit.

Aside from Skua and Cardinal, where should we go to eat in Edinburgh?

I recently dined at Montrose from the Timberyard people, it’s very good. I also love Chaakoo on Lothian Road for Indian small plates. It’s amazing.
