Two minutes with Frances, on her favourite parts of Il Palagio

Tell us about your favourite corner of the estate.

I love the new pop-up restaurant: La Taverna dei Lupi. The views over the hills are breathtaking, and the food changes regularly so every time you visit it's a new experience. When we launched it Sting performed a set - a night we'll not forget in a hurry!

How would you spend a weekend at Il Palagio?

Breakfast on Sting and Trudie's terrace, where dappled light and a stunning fountain set the scene for the most serene start to the day.
Then a long lunch under the trees, with beautiful produce from the locality, buckets of New Day rosé and the odd glass of Franciacorta too.
Then a swim in one of the natural pools amongst the frogs with birds chirping above.
And then after the sun goes down a movie - screened outside on the lawn. Possibly with another glass of something from the cellar - maybe a Sister Moon red.

What's your pick from Il Palagio's wine collection - what should we look out for?

The aforementioned Sister Moon is a special drop - made from cab sauvignon, merlot and sangiovese - it's smooth and utterly delicious.
