Why did you choose Borough Market as the destination for your next restaurant?
Borough Market has a special place in our hearts, we've been shopping and eating there for a good couple of decades and have watched it grow in energy and as a food and restaurant destination. So we were incredibly excited when the chance of running a restaurant there came up.
What do you want the overall feel of the restaurant to be?
We want it to feel buzzy and warm, a restaurant that retains the natural character and draws on the atmosphere of Borough Market but (through the food, drinks and design touches) also feels transportative, exotic and fresh for London.
Will diners see a link between Kolae and your other restaurant, som saa?
The key thread for us is the way we approach the food, the drinks and the hospitality. In the kitchen, although Kolae will have a whole menu of new dishes, the quality will be the same as som saa, we will use many of the same high quality ingredients and suppliers.
