What’s the story behind Lowcountry?
Lowcountry is the name of the area I’m from, coastal Georgia and South Carolina where it's very low and marshy. We are bar in a basement below another place (Counter 71), so there you go!
Your favourite cocktail on the menu to date and your dream boiler maker combo?
It was called the Chevron, with goat cheese-infused gin, rosemary and purple onion syrup, black pepper tincture and lemon juice. My dream boiler maker is any crisp clean beer and a whiskey. If price wasn’t an object, I’d drink Eagle Rare 17 with a nice lager.
Something you wouldn’t know about the bar unless you’ve visited before?
Our ethos is that anything we do here, you can also make at home without special equipment. We do things very manually and there's no lab-style kit, so we will teach you how to recreate your drink of choice with what you have available.
