Maré by Rafael Cagali opened on Church Road in Hove in September 2025, from chef-patron Rafael Cagali and partner Charlie Lee. Just six months later, Maré was awarded one Michelin star in the Michelin Guide Great Britain & Ireland 2026, becoming the first restaurant in Brighton & Hove to receive the accolade since the 1970s. Translating to ‘tide’ in Portuguese, Maré moves with the rhythm of the seasons, celebrating the produce of Sussex and the surrounding coastline. Head Chef Ewan Waller, a long-standing protégé of Cagali, leads the kitchen. Together, the team has created a menu that balances the refinement of Cagali and Lee’s two Michelin-starred Da Terra with the more relaxed spirit of its sister restaurant, Elis.
