What made you decide to turn the estate into a hotel?

The farm buildings were left abandoned for the best part of 60 years. As a family we had always dreamt of converting them. We originally thought of restoring them into self-catered holiday cottages. Alas, the vision snowballed into a full blown renovation and we ended up with boutique hotel (restaurant, bar, the lot!). Although COVID put a spanner in the works, we are now in our fourth year of trading and super excited to be putting our restaurant on the map.

What is your favourite spot at Newhall Mains?

I'm biased, but it's got to be the airfield. We are the only luxury hotel in the UK with an airstrip and as a pilot it's great seeing other guests arrive by air.

In your opinion, what is the must order dish on the menu?

Either the venison tartare or the onglet... an underrated cut that's easy to get wrong but when it's butchered properly it's so tender.
