What excites you most about opening in Mayfair?
Many people say London is the center of the world, and being a Londoner I agree! And there is nowhere more central in London than Mayfair. We see an exciting gap in the Mayfair market for high-end Japanese food and sushi: exceptional produce, creative dishes, and serious craftsmanship, served in a fun, informal setting at an attractive price point.
What traditional Japanese ingredients will take pride of place on the menu?
In a temaki there are 3 main ingredients: Rice, Nori, and Fish. Our Tsuyahime rice is grown exclusively in the Yamagata Prefecture. Our Mikuniya Nori is sourced from the nutrient rich Ariake Sea near Hiroshima. There is an abundance of amazing fish just off our shores and we love working with local and international suppliers to bring in the best, freshest and most interesting produce each week.
What is going to be your signature dish?
Obviously our signature "The Temaki"! Filled with 2 types of tuna, our housemade sauce and topped with our own branded caviar - it’s a real show stopper. But our Crispy rice and A4 Wagyu Sliders are the things that I still dream about. We know those are going to be on almost every table that comes in.
