We're very excited to see a second London opening from art'otel. Tell us about the decision to open in Hoxton?
PPHE started conversations to develop this hotel back in 2008, we saw Hoxton as a perfect fit for the art'otel brand given its thriving cultural and artist heritage.
What is the inspiration behind The Brush and the restaurant's name?
The Brush is inspired by the iconic Grand Cafés across Europe that provide a place for people to meet, whether it be for a breakfast meeting, long lunch or quick stop for cake and coffee. The name comes from a huge paintbrush sculpture which stands outside the restaurant, created by art’otel London Hoxton’s signature artist D*Face.
In your opinion, what's the best dish on the menu?
French Onion Soup is a classic and chef Ryan has got it so right at The Brush. It's warming but light and so flavorful and topped off with a thick, crisp hunk of cheese. It's a must order at any time of year.
