In five words, how would you describe The Sea, The Sea's new bistro?
Accessible, contemporary, elegant, warm and delicious.
You have a strict ethos around sourcing fish and controlling your own supply directly from responsible boats - why is this philosophy so important to The Sea, The Sea?
Seafood supply can be a minefield from a transparency POV, but by having a direct supply, we ensure full traceability and responsibility of our produce from source.
What made you want to open the new space in Chelsea?
The energy of our team who have triumphed in our current site this past year has given me the confidence to take our offering to the next level.
What excites you most about opening the new shop which will turn into an intimate seafood bar at night?
In our current site the seafood bar and retail business share a space so I’m looking forward to being able to operate them on separate floors, but we know customers have always loved the ‘conversion’ element of our model so we’re keeping this theme in the new space and the central fish display will become a dining counter in the evenings for drinks, oysters and light bites alongside the bistro and terrace which will offer a full dining menu.
