Why did you choose Belgravia as the location for your first restaurant? What is it that you love about the area?
As soon as we visited the site we fell in love with the area & Pimlico road. It’s a creative hub of independent businesses with a strong leaning towards interior design. We felt that really mirrored our vision of the restaurant. It feels like a true neighbourhood within central London
Your menu is very much inspired by the flavours of the Mediterranean, is there a particular destination that really speaks to you when it comes to the cuisine and dining culture?
There've been some really incredible places that we’ve visited together, but there’s two places that we always reference back to, when talking about the menu at Wildflowers, for different reasons. We love the atmosphere of a fast paced tapas spot in Barcelona hidden in the lanes. It’s always exciting and full of energy and we love that dining out in that way is so ingrained in the culture of the city. On the flip side, Florence and Tuscany in general are where we think about for longer, more leisurely lunches. The cookery is always regional and authentic, it makes you feel like you’re eating a family recipe in an extension of their home.
Which dishes from the Wildflowers menu are you most excited for guests to try?
We’re quite excited about the guests trying it all! But if we were to pinpoint a couple, then I’d say the Cuttlefish Fideuà, which is similar to a paella but using vermicelli-style noodles instead of rice. Secondly, the Moules Farcies, they’re a perfect way to start a meal. I think these will be the main-stay dishes, with the rest of the menu evolving regularly around them.
