For two weeks only, guest chef Dan Wilson will be taking over the kitchen at Crispin, the new all-day cafe and wine bar in Spitalfields. Australian-born chef Wilson, formerly of Dandy, P. Franco and Petersham Nurseries, and upcoming chef for Charlotte Wilde's much-anticipated Darling, which is due to open later this year, will serve a menu of seasonal small plates Tuesday to Saturday evenings from 30th October to 10th November.
Wilson's concise menu will be a reflection of the food he enjoys eating and is inspired by his Aussie upbringing and time spent abroad studying the history of gastronomy. Ingredient-led and designed for sharing, the menu will offer the option to order ‘one of everything’ for £50 (to share between two), with individual dishes including:
Tempura Alexander leaf
Rye beer chips
Salted cod tartare, seaweed and dill
'Nduja, honeycomb and whipped egg
Tagliatelle in roast drippings and hazelnuts
Glazed lamb ribs
Milk ice cream, rhubarb sugar and cider granita
Wilson’s menu will be served alongside Crispin’s natural and low intervention wines chosen by Fernando Berry of Otros Vinos. Bread is supplied by east London favourite, Dusty Knuckle. Offering 40-covers, Crispin is located in an impressive purpose-built zinc and glass pavilion on White’s Row, just five minutes’ walk from Liverpool Street station on the edge of the iconic Spitalfields market.
