Set to open in early July at London's iconic St. Katharine Docks Marina, just five minutes’ walk from the Tower of London and Tower Hill tube station; Hoh Sek, which is Cantonese for 'delicious', will operate as a casual dining, grab-and-go noodle concept during the day, before transforming into a 40-cover sit-down restaurant service in the evening, including 8 seats at the bar counter; and up to a further 30 seats available outside on the terrace in summer months. Saiphin will curate and oversee both the grab-and-go noodles and evening dinner menus at Hoh Sek.

Located inside an impressive water-side pavilion in the heart of the marina, known locally as the 'Round House with the Green Roof', Hoh Sek is inspired by Saiphin’s time spent travelling Asia and living in Hong Kong; and is a celebration of the world's finest noodles. Before moving to Hong Kong aged 18, Saiphin opened her first 'noodle shop' in her hometown of Phetchabun in Thailand, aged only 14.

The daytime grab-and-go menu at Hoh Sek, available Monday to Friday from 12 noon through 3pm, will feature a core menu known as ‘Saiphin’s Six’ - six noodle dishes with Asia-wide influences, but primarily Chinese in focus. The final menu is still to be confirmed, but guests can expect dishes such as ‘Red fermented tofu soup with flat noodles, prawn, squid, fish ball, water spinach & bean curd’ and ‘Pork noodle soup with rice noodles, roasted pork, long beans, celery, coriander, bean sprout & lime’ (prices from £7.5 per noodle dish).

Then, rolling into the evening from 6pm and also available all weekend, the vibe at Hoh Sek will change and guests can enjoy more substantial restaurant dishes from a seasonally changing menu of sharing plates, with meat, fish, vegetarian and vegan options available (main dish prices from £11.5). Saiphin also plans to offer a weekly specials board with some of her own home recipes, and will host one off supper clubs and customer menu tastings at Hoh Sek.

Commenting ahead of the launch, Saiphin Moore said, “Noodles have always held a special place in my heart as it was my first noodle shop, which I set up when I was 14 in Thailand, that first started me on my career as a chef. Years later, Alex and I met in Hong Kong and we fell in love with the street food noodles there. You can buy great and tasty noodles from almost every street stall and they're also served in the more traditional restaurants. They’re a real symbol of the city’s thriving food scene, so this is what we now want to bring to London and share with everybody. Alex and I live close to St. Katharine Docks, and this is where the idea for Rosa's Thai Cafe was born when we first moved to London, so seems fitting we are returning here to launch Hoh Sek in our own neighbourhood this July. We hope everybody will fall in love with amazing noodles like we have."

Hoh Sek is established with the support of private equity group TriSpan, which acquired a majority stake in Rosa’s Thai Cafe last year. Saiphin and Alex's roles at Rosa's Thai Cafe remain unchanged.

Hoh Sek will open at St. Katharine Docks Marina this July.
