THE SEA, THE SEA finds new home on charming Pavilion Road

Known for fantastic access to seafood, and supplying some of London’s most prestigious restaurants, the new site opens this spring (just opposite its current spot!). It'll remain home to a fish shop and deli, but adding a 40 cover first floor restaurant, too. Head Chef Nick Marsden (who honed his career at Dovetale, Pitt Cue and The Laughing Heart) promises a fantastic seafood menu focussing on fresh, seasonal supply, centred around the grill.

MARÉ awarded Michelin star

We headed to Dublin last month to witness Michelin in action at this year's ceremony. Whilst seeing Moor Hall retain its three and green stars; Kitchen Table's two, and Luca, Osip, Gorse, Shaun Rankin at Grantley Hall, Cail Bruich and The Ninth retain their star - it was particularly special to celebrate with Rafael Cagali and Head Chef Ewan Waller as their Hove restaurant Maré won its first - just months after opening, as well as being the first in the city for 50 years. Read more here.

Tonic turns 15!

... and to celebrate we threw - of course we did - a long lunch. Clients joined us from all over the country as we reflected on their businesses and our role as consultants and storytellers. It was wonderful to take the opportunity toast the work we've done together over the last decade and a half. The Palmerston cooked up a storm; Flint took care of the delicious wines and Smith & Willis opened up their home for the occasion. Thanks to all that joined us - here's to the next chapter together.

What's on this month

On 1st March, Heard - the burger restaurant from two Michelin-starred chef Jordan Bailey - will launch its first-ever collab with Aji Akokomi of Michelin-starred Akoko on a limited-edition menu shaped by West African flavours. On the 10th/11th March, Lannan will host a pop-up by our good friend Edd Kimber, to coincide with the release of his book, Chocolate Baking. On the 13th and 14th March Ryan Cole, Executive Chef and Co-owner of Salsify at the Roundhouse, will bring a taste of South Africa to the Scottish borders, collaborating with Chef Dan Ashmore for two exclusive dinner services at Sunlaws, located within SCHLOSS Roxburghe Hotel. And this month sees Pyro launch a tasting menu — a seasonal, flavour-led journey through some of Pyro’s hero dishes.
