Last week saw Tonic clients The Ninth, Trivet and Paco Tapas retain their Michelin stars, and long-term client Luca win its first. The awards are still the pinnacle of recognition for the industry, and we're proud to work with such diligent, creative individuals and businesses operating at the top of their game.

More celebrations came in the form of the Code Women in Hospitality awards, hosted by founder Adam Hyman. Among a list of illustrious winners, indefatigable powerhouse and friend of Tonic's, Jules Pearson, quite rightly walked away with Disruptor of the Year.

Luca awarded first Michelin star in 2023 guide

Luca, the modern Italian restaurant in Clerkenwell has been awarded its first Michelin star in the 2023 guide. Michelin said Head Chef Rob Chambers earned the award for Luca's "delicious Italian dishes". Elsewhere, Peter Sanchez-Iglesias's Paco Tapas in Bristol, Jun Tanaka's The Ninth in Fitzrovia, and Trivet from Jonny Lake and Isa Bal in Bermondsey all retained their stars. Read more here.

Tom Kemble joins Chalk and Wiston Estate as Executive Chef

Critically acclaimed chef Tom Kemble has joined the team at Chalk Restaurant and Wiston Estate in West Sussex as Executive Chef. Formerly Head Chef at Michelin-starred Bonhams, Tom's ingredient-led approach sees him focus on Sussex produce, sourced largely from the estate itself. Located on Wiston Estate’s winery, the restaurant is named for the vineyard's limestone soil, which gives its award-winning wines their distinctive profile. Read more here.

Spotlight: Mam Sham

Childhood friends Maria Georgiou and Rhiannon Butler came together in 2017 to form Mam Sham, a dynamic duo curating exciting high concept dining experiences that creatively combine food and comedy.

Starting out putting on events in any space they could get their hands on, Mam Sham has developed into a London phenomenon infamous for its sell-out supper clubs and raucous atmosphere, where profits are donated to charities supporting the homeless, female refugees and more. Every element of Mam Sham’s events are curated by the duo, from graphic design and audio-visuals, to the comedy line-up and menu concept.

Mam Sham have worked with some of comedy’s most exciting talent including Jamali Maddix, Thanyia Moore, Kojo Anim and Babatunde Aléshé, and have collaborated with some of London’s top chefs and food collectives such as Acme Fire Cult, Supa Ya Ramen, Black Axe Mangal, Four Legs and Taste Cadets, all while honouring their ethos of “Good grub + lols”.

Just last week, Maria and Rhiannon hosted their biggest supper club to date at Big Penny Social, teaming up with North London Turkish-Cypriot chef Big Has, Hackney Chinese food sensation Lucky + Joy and ice cream sandwich connoisseur Happy Endings, with all proceeds donated to DEC Turkey-Syria Earthquake Appeal.

At this high-end Chelsea pub, Head Chef Fionnan Flood’s classic rarebit is served on sourdough with Worcestershire purée and puffed wild rice.

Reblochon on malted buckwheat toast at Oxeye

Available on the restaurant’s Obento lunch menu, Chef Sven-Hanson Britt tops in-house baked bread with the Alpine melted cheese and pickled chilli.
