2024 was undoubtedly a year of exceptional launch campaigns at Tonic, and we have thoroughly enjoyed spending the Christmas break reading about Sesta, Wildflowers, Kolamba East, Margo, Cornus and Marceline all being recognised as 'restaurants of the year' by highly regarded publications. We couldn't be prouder of our work with them, and can't wait to see what the next year brings for all our partners.
This year will also see us spread our wings beyond London and Scotland, so stay tuned over the next few weeks for details of our new work in the South West and North West of England, as well as in Cardiff, Amsterdam, Tuscany and South Africa.
In 2025, we look forward to sharing more stories of fascinating and talented individuals bringing big, bright things to the worlds of food, drinks and travel with you.

BRASSERIE ADELINE and GAMBIT BAR to open at THE NEWMAN hotel in summer 2025
We're hugely excited to be working with The Newman - the contemporary Fitzrovia hotel opening next year - on the launch of its elegant restaurant, Brasserie Adeline, and the intimate, subterranean Gambit Bar. Adeline will offer a northern European twist on the modern brasserie - including a sandwich trolley - while Gambit will channel Fitzrovia's bohemian past with dynamic design and cocktail-fuelled chess nights. OREN launches Slow Sundays, a lunch menu celebrating the slow-cooked braises of the Mediterranean and the Middle East
We're pleased to welcome chef Oded Oren into the Tonic fold this month, who is launching Slow Sundays - a glorious new Sunday lunch menu - at his beloved Dalston restaurant. The new offering at Oren will swap its grill dishes for the slow-cooked stews and bakes inspired by the Middle East, North Africa and Mediterranean: join for a mezze feast followed by the likes of Beef short rib with chard, dried Persian lime and freekeh. ESRA now open in Amsterdam from chef Selin Kiazim and Steph de Goeijen
We're really excited to see longstanding Tonic friend Selin Kiazim open Esra, her first restaurant in Amsterdam, with co-founder and partner Steph de Goeijen. The London-born chef - best known for the much-missed Oklava - channels her Turkish-Cypriot heritage on the menu at the neighbourhood restaurant. Start the year with a steal at Hawksmoor Edinburgh, where diners can get a steak and a side for just £19.50 at lunch this month, or spice up Veganuary at Kolamba East with its three-course plant-based menu for £35. Pastaio kicks off its tiramisu series with Denai Moore's vegan Mango Coconut Tiramisu, while diners at Soho neighbour Yasmin can unlock mystery prizes by picking one of 'The Lost Keys of Soho' from its Yasmin Ever After floral installation. Hackney hotspot Sesta launches a new Sunday lunch menu, featuring hearty, family-ready dishes inspired by chef Drew Snaith's beloved grandmother, and Cornus is expanding our non-alc horizons this Dry January by teaming up with premium tea specialists Lalani & Co for a tasting event on 16th January.
Chef Spotlight: Shaun Rankin
Shaun Rankin is the highly acclaimed Chef Patron of Michelin-starred restaurant Shaun Rankin at Grantley Hall, and one of the UK's most respected chefs. The Yorkshire-born chef returned to his home county to open the restaurant at the award-winning luxury hotel in 2019, but not before making his culinary mark in a very different part of the country.
Early on in his career, Shaun's love of the sea took him to the Channel Islands. In 2003, he joined Jersey restaurant Bohemia as Head Chef, where he earned a Michelin star two years later. Shaun then went on to open Ormer, his own restaurant on the island, in 2013, which was awarded a Michelin star just four months after opening. He then went on to London, with the openings of Ormer Mayfair and 12 Hay Hill.
Shaun's work saw him renowned for championing the unique produce of Jersey - now, he's channelling this passion for sustainable and seasonal British produce into showcasing the very best of Yorkshire. At Grantley Hall, Shaun oversees the nurturing of its exceptional Kitchen Garden - the fruits, vegetables and herbs grown here form the basis of his Taste of Home menu, with further ingredients sourced within a 30-mile radius of the hotel.
