Trivet – the two Michelin-starred neighbourhood restaurant in London’s Bermondsey – has launched Labombe Wine Bar, a new concept which sees its dedicated bar open on Monday evenings under a new guise. The bar will serve guests an exclusive by-the-glass wine offering from sommelier Isa Bal, and a blackboard menu of relaxed but elevated bar bites from chef Jonny Lake.

A continuation of the duo’s passion for harmonising food and drink experiences, Labombe Wine Bar is inspired by the fictional bistro created by former The Fat Duck Head Chef Jonny for a school French project, on which the teacher commented “Où sont les boissons?”, meaning “Where are the drinks?”. Jonny decided to reimagine Labombe as a wine bar at Trivet – this time with plenty of drinks courtesy of Michelin Award-winning Master Sommelier Isa.

While the main restaurant remains closed as usual on Mondays, the Labombe Wine Bar offering sees Isa delve into his award-winning, 450-strong wine list, choosing bottles to pour by the glass exclusively that night. This offers a chance for wine enthusiasts to try a curated selection of unique, rare wines, without the need to purchase a full bottle. Isa’s celebrated wine list is arranged chronologically, from the historic beginnings of wine to the present day: wines range from contemporary producing countries such as Italy, France and the US, to those from the roots of viti-viniculture in Georgia, Armenia and Turkey.

Alongside the wine offering, guests will be able to sample a menu of small and large plates from chef Jonny. Snacks include Focaccia with salume rosa and Farinata with onion and rosemary, along with Homemade French fries with onion ketchup. Seasonal small plates include dishes of Green asparagus, anchovy cream and scallop roe and the Hot Tongue Bun, a beloved dish from the restaurant’s lunch menu of braised Angus x Wagyu ox tongue dressed with anchovy mayo, pickles and blackcurrant mostarda. Larger plates include Costoletta alla Milanese, and Italian breaded veal cutlet served on the bone with white cabbage and salsa agrodolce. For dessert, diners can indulge in the likes of Tiramisu, and Jonny’s Canadian childhood favourite, Butter tarts.

Trivet opened in November 2019 by The Fat Duck alumni Jonny and Isa. Trivet earned its first Michelin star in 2022, followed by its second in 2024. The restaurant’s name derives from the cooking utensil – an iron tripod used across global cooking cultures – reflects the relationship between kitchen, cellar and bar, and the warmth and balance in the pair’s values and working relationship. From the very beginning of the creative process, Jonny and Isa put the relationship between food and wine at the heart of each dish, with compelling drinks pairings considered at the development stage. Alongside the 20-seat standalone bar, the restaurant has a 45-cover dining room and an outdoor terrace seating 25 guests. The Mustard Room, Trivet’s private dining room, accommodates up to 35 seated covers.
