Pascor, a fire-focused new Levantine restaurant, will open on the 20th June in Kensington. The latest concept from Tomer Amedi (former Head Chef & Co-founder at The Palomar) will serve up playful cocktails, explorative wines by the glass and Levantine small plates, with a menu that puts the magic of over-fire cooking – from smoky flavours to seared textures – at the heart of every dish.

Pascor, meaning ‘to indulge’ in Latin, is the first West London bar and restaurant from Jerusalem-born Amedi, and the menu will showcase his modern interpretation of Levantine flavours, paying homage to classical combinations with a dynamic, London-influenced twist.

Using seasonal British produce, the menu begins with ‘Breaking bread’ – e.g. Samneh Challah, whipped Za'atar butter, smoked black tahini – with the rest split into sections ‘Sea’, ‘Land’ and ‘Garden’. Signature dishes include:

Samneh butter scallops - charred leek cream, merguez gremolata and lemon balm
***
Kombu-wrapped halibut - pickled kohlrabi, tarragon, chilli almonds
***
Egyptian duck breast salad - cucumber, pickled carrot, coriander and dukkah
***
Charcoaled Wagyu skirt - bone marrow, pomegranate with coriander and watercress Chimichurri
***
Burrata - dried apricot ‘tapenade’, pistachio and lamb’s lettuce
***
Medura (campfire) style potato - ‘Butter of the Gods’ (bone marrow and egg yolk), merguez gremolata
***
Burnt aubergine - black tahini, pine nuts, pickled tomatoes, mint and capers

Desserts will be a vibrant take on classics: a Chocolate and tahini crémeux, made with milk and pistachio crumble and blueberry sauce, is a reimagining of the traditional English crumble; the Coconut “Beirut meets Bangkok” malabi with pineapple, kadaifi, basil and coriander seeds is inspired by Amedi’s world travels. Pascor’s cocktail menu includes the likes of a Avi Bitter Lemon, named after an Israeli celebrity known for his “sour” expression, with Ouzo Palomari, grapes, mint, Bitter lemon Fever-Tree and grape syrup; the White Turkish, cardamom-infused vodka, Turkish coffee, cream and Kahlua, a twist on the classic White Russian. Wines have been curated by Amedi with a focus on Levantine productions, alongside his ‘Coravin adventure’: Amedi’s favourite wines - not normally available by the glass - available for exploration and enjoyment, which will rotate through different suppliers and regions, beginning with Lebanon and Israel.

Pascor spans two floors, seating 50 covers inside with a combination of intimate booths and long sharing tables. Downstairs has a large open kitchen and a small terrace with five tables, with an additional bar situated on the first floor, perfect for more relaxed dining and drinks. Convivial, warm and inviting, the upstairs dining room features a huge arched window, bathing the space in natural light to create an oasis overlooking the streets of High Street Kensington. Music will be curated by Amedi, a life-long music lover, with an intention of showcasing a selection of world and emerging artists alongside cult classics.
