This May, Pastaio will bring back its hit series of collaboration slushies, with five serves created in collaboration with some of London’s favourite cocktail bars, restaurants and, for the first time florists and designers. This summer’s collaborators include the vibrant, Dalston-based florist My Lady Garden; East London coffee pioneers Climpson & Sons; well-loved Burmese restaurant Lahpet; award winning Dalston cocktail bar Three Sheets, and lauded design studio Campbell-Rey, founded by Duncan Campbell and Charlotte Rey.

The series will kick off on 7th May with a Pink Gin and Raspberry Sorbet slushy from the bold flower bar and concept store My Lady Garden, created by Kai Kaimis, with delicate flavours of tart raspberry, lemon and the complex botanicals of pink gin. This will be paired with a limited-edition dish of Pink Peppercorn Caramelle created by Stevie Parle exclusively for the month of May - playful parcels of candy striped, sweetie-shaped pasta filled with cacio e pepe.

Next up is a reimagining of the cult classic Espresso Martini in collaboration with East London coffee institution Climpson & Sons, specialists in London’s coffee scene who pride themselves on sustainability and ethical sourcing. The Espresso Martini slushy comprises Midnight Oli liquor and Amaro and is available throughout June.

Pastaio will then join forces with Lahpet, the acclaimed duo of Burmese restaurants, in July, to launch a fragrant Myanmar Sling slushy, made from gin with pineapple, custard and masala-infused syrups for a fresh and zesty celebration of Burma’s distinctive flavours. This will be followed by cocktail making masters Three Sheets’ take on their cult favourite, the Palo Santo Margarita, made with Palo Santo Tequila, Merlet Trois Citrus and Arabica Orange Flower Water, adding depth to classic marg throughout August.

Wrapping up the series in September, celebrated design studio Campbell-Rey, known for their covetable furniture and elegant tableware, have crafted a Peach, Mezcal and Lime slushy, championing the very best of late-summer’s produce for a rich sun-downer. To complete the collaboration, the Campbell-Rey slushy will be served in some of Campbell-Rey’s stylish glassware.

Each creation in the series will be available for one month from May to September at Pastaio’s Soho and Westfield restaurants. Both sites will also host newly-designed terraces, hand painted by Elle Shoel of My Lady Garden, adding bright, colourful, floral designs to the perfect summer hang-outs.
